This morning everyone in my house was having pancakes and waffles and I am sitting there thinking this is so unfair! So I did something about it and made some that I could eat! I hope you like them as much as I did!
1 tablespoon nut butter of choice
Mix it all together turn the stove on spray some coconut oil in the pan pour your batter in the pan but not too much or it will be too hard to flip! Once it starts to bubble through flip it! Once it’s cooked through on the other side it’s all done and ready to eat!
I also popped some Cajun chicken sausage in the oven at 350f while I made my pancakes!

This morning I was packing up to head out of town with my dads side of the family so I cooked two 8lb pork butts and shredded them and then tossed it with some sensuous dinosaur bbq sauce. Man oh man did it smell delicious! While I was working on that I decided to cook breakfast for mom and my stepdad before I made them go on a walk with me and our 2 precious and might I say good looking labs!
What I did was sauté some zucchini squash green red and yellow bell peppers in some olive oil salt pepper and garlic to taste until tender.
In a separate bowl whisk together 8 eggs with salt pepper and garlic to taste then add the eggs to the veggies and stir until cooked through.
Serve piping hot with a glass of orange juice! Delicious !
I always take advantage of the opportunity to make a big breakfast casserole or dish when I have family to spoil and enjoy it with. I found this recipe on paleomg ill include the link here at the bottom. It was a sure hit , I’d even make it at home to heat and eat all week. It has all the components of a complete breakfast!!
Mushrooms ( baby portabellas)
1 teaspoon Onion powder
1 teaspoon Garlic powder
1/2 cup coconut milk
Sweet potato sliced thin lengthwise ( these will be your layers)
1 pound spicy italian sausage (I used Mulays)
2 tablespoons fat of choice ( I used coconut oil)
Now in a saute pan put a tablespoon of fat and cook your onions and mushrooms seasoned with salt and pepper until soft. Then saute your sausage in a separate pan until browned or cooked through. Next cut your potato. Time to take out your pan! Cut your sweet potato and lay it in your pan as your base layer, then put your mushroom and onion mixture and sausage on, then repeat one more time. In a small bowl whisk together your coconut milk, garlic, and onion powder. Spread this on top of your layers, sprinkle with a little salt and pepper. cover your dish with foil and bake at 375 for 30-35 minutes or until your potatoes are soft. while that is in the oven you will need to scramble your eggs! I put a tablespoon of fat in the pan ( this would be amazing with bacon fat!) and scrambled my eggs with a little salt and pepper to taste. When your layers are done in the oven remove them, remove the foil and top with your hot, fresh scrambled eggs! Pour a couple glasses of fresh squeezed orange juice, gather around the table and make some memories!! you won’t regret it!!

Happy Valentines Day Everyone! This morning I decided when I woke up that I would make my mom and step dad breakfast in bed. I normally make them a smoothie in the mornings and have it ready for them when they get up and ready to go to work since I am always up and gone before they are even out of bed (how unfair! lol), but this morning I thought I’d do something a little bit different. I made them some Scrambled eggs (organic and cage free) with a slice of bacon, and one of my strawberries dipped in “chocolate” that I posted yesterday! I really wanted to do something different than that, but I hadn’t been to the store yet to get all the ingredients that I had originally wanted to do. It’s okay I will get over it, it still turned out really good! I hope everyone has a great day filled with love and laughter!!
