So Valentines Day is coming up on Thursday and I wanted to make mom her favorite chocolate covered strawberries! But I wanted to be able to enjoy them too! So I went to the store and bought some delicious plump red strawberries and some enjoy life chocolate chips.
wash the strawberries and then melt the chocolate in a bowl in the microwave stirring frequently.
then dip the strawberries in the chocolate. place them on a parchment paper and then in the fridge to harden and then enjoy!!
They are so scrumptious and so easy to make! They are dairy, nut, and gluten free! What more could you need!

Last week I decided that apple pie sounded delicious! So I set out for some yummy recipes to look at and try and come up with my own yummy concoction that fits all of my dietary needs. It turned out pretty dang yummy but I don’t think this is a recipe for just anyone. I mean lets get real if you can have the real thing this just doesn’t compare!! But for those that have restrictions this little beauty turned out perfect!
For the crust
A pinch of salt
1 cup coconut flour
2 Tablespoons shredded coconut
1 tablespoon honey
1/4 cup butter ( i used coconut butter)
pinch of salt
put into a bowl and combine, then line your baking pan with the crust
For the Filling
5 apples cut into bite sized pieces
2/3 cup coconut sugar
2 Tablespoons lemon juice
1/4 teaspoon clove ground
1/4 teaspoon nutmeg ( I didn’t have any so I left it out, but it still came out great!)
2 teaspoons cinnamon
2 Tablespoons coconut oil
Mix in a bowl and put directly on top of the crust then bake at for 350 for 50 minutes
Paleo also known as the caveman diet is a great lifestyle for those that have food allergies of any kind. All of the recipes are all natural ingredients, things you could only hunt or grow, and they are super easy to adapt to your specific needs. Those that follow the Paleo lifestyle only eat meat, vegetables, nuts, and fruits! They do not eat flours, grains, legumes, or dairy. I know what your thinking…how in the world do they stay full? And how does any of that taste good? Well because our bodies are meant to break down natural fats, proteins, fruits, and vegetables our bodies begin to use our fat stores as energy instead of all the carbohydrates from eating foods such as breads or pastas allowing us to feel full longer, keep our energy levels high, our blood sugar levels balanced, and our bodies fined tuned for everyday tasks. You won’t even crave sweets after a few months! Don’t get me wrong i still want to indulge in chocolate chip cookie dough ( recipe to follow) and the occasional coconut ice cream but over all i don’t ever crave sweets. I eat three meals a day, breakfast, lunch, and dinner. I hardly ever have a snack, but some days I do because I need the extra energy to get me through the day. I have seen several people from the gym I workout at ( more on that later) really excel in their physical goals as well as their health goals by changing their lifestyles. Just when you think you couldn’t get any healthier ! Haha

Eggless, dairy free, gluten free, grain free, nut free chocolate chip cookie dough
1/2 cup Grade b pure maple syrup
3/4 cup Coconut flour
1/2 cup Coconut oil
1 teaspoon Vanilla extract
1 teaspoon Salt
1 1/2 cup Enjoy life dairy free, nut free, gluten free chocolate chips
I mix everything together in a bowl until well combined and no clumps, then fold in the chocolate chips. Freeze the cookie dough until you want to use it. I like to just eat the dough by itself , I have never made actual cookies out of it, but if you added egg I’m sure it would work out! You can also make coconut milk ice cream and fold in the cookie dough at the end to make chocolate chip cookie dough ice cream! I’m making my mouth water just talking about it!
