Poof a yummy healthy weeknight meal!
Preheat the oven to 375
One green bell pepper
Half an onion
Three celery stalks
1 tsp salt, garlic powder, pepper
2 Tbsp coconut aminos or your choice of soy sauce
2 pounds ground turkey
Chop up all your veggies, place all ingredients in a bowl and mix with your hands ( make it with all your love that’s the key 🙂 ) put it in a loaf pan sprayed with a little coconut oil for easy removal! Bake for one hour and then let sit for 10 minutes!
Eat that yummy goodness and fuel your body with healthy food!!!
I served mine with baked asparagus and broccoli ! Yum!

Preheat the oven to 400
Head of cauliflower
1lb chicken chopped
1 t Salt
1 t Pepper
5-6 T Hot sauce ( I used tessemaes hot )
1 T Paprika
2 T Garlic powder
1/3 cup Coconut oil melted
5-6 slices cooked bacon chopped
Place the coconut oil , hot sauce, spices, cauliflower, and Brussels sprouts in a pan mix together to coat and bake for 30 minutes stirring every 10 minutes
Meanwhile chop up your chicken and mushrooms and drizzle some hot sauce on them while the veggies cook
Once the veggies are done place the chicken and mushrooms on top and bake for 15 minutes stir things up to make sure all the chicken gets cooked and then finish it off 5 more minutes! Enjoy!!!
It’s been awhile since I have cooked something new and delicious to share!!! So here’s a kick off for some summer cook outs! Life happens I was busy busy so I baked lots of chicken and veggies and just packed my lunch and dinner for the week! I am excited to cook some new and yummy food!
1lb fresh gulf shrimp
1 lb chicken breast cubed
Red onion cubed
Green bell pepper cut in into squares
Red bell pepper cut into squares
Yellow bell pepper cut into squares
Orange bell pepper cut into squares
4 jalopenos diced with or without seeds
2 cloves garlic chopped
4 Tbsp Dijon mustard
2 Tbsp olive oil
2 Tbsp raw honey
2 tsp salt
1 Tbsp rosemary
1 tsp black pepper
Marinade the chicken and shrimp in the all ingredients minus the bell peppers and onion for 24 hours
Then assemble your skewers
Fire up the grill
And enjoy :))

This is super easy and quick to make!
1 pound chicken sliced into strips
One red and green bell pepper sliced thinly
One package mushrooms
One onion thinly sliced
One can of muir glen tomatoes
One can green chilies
1/2 teaspoon Garlic powder
2 teaspoons Chili powder
2 tablespoons Olive oil
2 teaspoons Cumin
1/2 teaspoon oregano
1/4 teaspoon salt
Put all of your ingredients in a baking dish. Preheat the oven to 400F. Then mix your olive oil and spices in a bowl and pour over your concoction. Bake for 30 minutes or until veggies are tender and chicken is cooked through!
Now make a salad or taco or whatever you want out of it!
Love the smell of cooking in the crock pot! Delicious! I spent most of my day cleaning and worked a half day so it was nice to have dinner ready and waiting on me at 615! I was starving!
3 cans muir glen tomatoes
1 can chopped green chiles
An onion chopped
Red and greed pepper chopped
Pack of sliced portobello mushrooms
2 tablespoons olive oil
1/2 teaspoon salt
1 tablespoon Italian seasoning
4 garlic cloves chopped
1 pound of chicken
I put everything in the crockpot with the olive oil and chicken on bottom ( my chicken was frozen) and turned her on low and let it do it’s thing! 5 hours later you have a delicious soup or put it on top of some spaghetti squash !
I originally heard about this recipe from my boyfriends sister. She eats a paleo lifestyle about 95% of the time, mainly because she is a workoutaholic and likes to feel good and eat super clean, not because she has too, but she is one of the most beautiful people I know and I would kill to have her body. So I decided to give this recipe a try once I had heard all of the rave about it! It really was delicious! I would definitely make this again! It is so colorful, nutritious, and delicious!
What you will need for this delicious concoction!
1 bunch of kale
1 butternut squash cubed and peeled
1/2 pound chicken cubed
1/2 pound venison
3-4 strips bacon diced
1 head cauliflower riced
1/2 cup broth
1 tablespoon coconut oil or other fat
2 tablespoons balsamic vinegar
2 tablespoons rosemary
2 tablespoons garlic powder
salt and pepper to taste
preheat the oven to 375 F
then get a large skillet and place over medium heat, add your coconut oil, then place your butternut squash in the skillet and drizzle 1 tablespoon of balsamic vinegar over the squash. glaze on each side for 5-6 minutes
meanwhile rice your cauliflower when the squash is glazed top with cauliflower, 1 tablespoon garlic, 1 tablespoon of rosemary, 1/2 cup broth cover and cook down
in a separate pan over medium heat add your chopped bacon, after it has rendered some fat add your venison or other ground meat and chicken , cook until browned
while the meat is cooking add the chopped kale to the cauliflower pan and recover to cook down
now add the other tablespoon of garlic, rosemary to the meat mixture and stir to combine
then combine all into a baking dish and mix thoroughly, then add salt and pepper to taste
Bake for 15-20 minutes!
Enjoy on a cold winters night or for a good boost of nutrients! You are sure to love it!This is where I go it!
I hope everyone had a great, fun, safe weekend! Today has been a great day! Work, rehab (hopefully not too much longer), grocery store, 2 mile walk with the dogs and my favorite boy, and of course cooking dinner!! Busy busy! It’s someone specials birthday tomorrow so a long night of planning ahead! Tonight is blackened chicken with spicy spaghetti squash! Yum!
4 boneless chicken breasts
2 T paprika
2 t chili powder
1 t cayenne
1 t coriander
1/2 t salt
1 t oregano
1 t garlic powder
Mix spices together and cover chicken
Bake at 375 for 20-25 minutes
Cut in half length wise place each half face down in a pan filled with an inch of water and bake for 45 minutes at 375
Then use and fork and shred Into noodles
Place noodles in a heated sauté pan with 2 T o olive oil add 1 T dried basil, 1 t oregano dried, 1 t red pepper flakes, and pepper toss
Then place noodles in a bowl and top with slices of blackened chicken!
Finally a day to really get my cook on! I decided that I wanted to try an enchilada recipe so I set out in search of what I thought would be a good one! We have a winner! It was absolutely divine and all organic and healthy for you!
Here is where I found it!
For the Sauce
1-2 adobe chili peppers chopped and 1-2 tablespoons of the sauce
2 cups of chicken broth
3 8 ounce cans of tomato sauce
2-3 garlic cloves chopped
2 teaspoons cumin
2 teaspoons coriander
1 teaspoon pepper
put all ingredients in a sauce pan bring to a boil and then simmer until ready to top the dish
For the Chicken I used 2 pounds of chicken breasts, boil in water for 8 minutes, remove and shred with two forks meanwhile sauté chopped onion, chopped green bell pepper, garlic clove chopped, 1 tablespoon olive oil, 2 teaspoons dried oregano, 2/4 cumin, 2/4 coriander, and 2/4 black pepper until bell peppers are tender and onions are translucent
stir in the chicken for 1 minute and then take off heat
you will need 1 head of cauliflower, I used my handy dandy food processor and riced my cauliflower, you will put this as the base of dish mixed with 1/2 cup of sauce
once you have laid the bottom layer, spread your chicken mixture ontop then add the sauce, cover with foil and cook for 30 minutes at 350 degrees F. Then remove the foil and bake for an additional 10 minutes.
Remove from the oven and top with chopped cilantro and avocado slices.

It’s a Tuesday! I was wanting to do something very simple for dinner tonight because I had to work late and I needed to run some errands after work. So I’ll keep things short and sweet here too! But first, I have to rave about this amazing marinade that I used. It is called paleo chef by Steve’s original maple mustard flavor! It is all natural and amazing so go buy some! For the chicken…
Marinate it in steves mustard maple marinade overnight or for at least 30 minutes in the fridge
Preheat the oven 375 and cook for 30 minutes or until done
Pour chicken and marinade in a baking dish and cook
I also cut up zucchini and squash put them in a gallon ziplock bag sprinkled them with garlic infused olive oil and a garlic habanero seasoning blend
I roasted them in the oven 350 for 25-30 minutes or until desired tenderness
Then came the orange,red, and yellow bell pepper sliced and drizzled with garlic infused olive oil and a jalapeño infused vinegar baked in the oven at 350 for 25-30 minutes or until desired tenderness
