Bell peppers and sausage

This is an easy delicious quick dinner! We make this all the time around here! It’s just delicious!

Garlic 4 cloves
One can muir glen tomatoes with green chiles
Sausage link
Tri color bell peppers chopped
2 teaspoon oregano
1/2 teaspoon red pepper flakes
Salt and pepper
Olive oil

In the oven heat you sausage through or cook it at 350 until done and set aside

In a sauté pan over medium heat and cook bell peppers onions and garlic in olive oil . Once your veggies are soft add in your tomatoes and the oregano salt pepper and red pepper flakes and heat through. Now place that sausage on top and serve in a bowl!!

Eat it all up!!! Delicious :).



Creamy chicken bake

This one was a hit in our house! I found this on a paleo website/blog… Ill add the link here at the bottom.

Preheat the oven to 400f!

2 cans coconut milk
1 cup vegetable stock
1.5-2 pounds chicken breasts
1/2 teaspoon cayenne
1/2 teaspoon smoked paprika
Salt and pepper
2 teaspoons garlic
4 cloves garlic
Olive oil
Bacon fat

Chop the broccoli and cauliflower toss in olive oil salt and pepper. Bake for 20 minutes.

Meanwhile heat bacon fat in sauté pan and cook chopped chicken breast with salt and pepper. Once cooked spoon out leaving the juices in the pan the chicken to a separate bowl or on top of your broccoli and cauliflower if done.

Add your onion and garlic chopped into the pan and cook till translucent. Then add in your cans of coconut milk vegetable stock and spices once thoroughly combined pour over your chicken broccoli and cauliflower . Now add your sliced mushrooms on top

Bake for 30 minutes

Fruit caramel dip take 2!!

So I was playing around with some sunbutter today and came up with this delicious caramel dip! It was soo good! Hope you like it 🙂

2 tablespoons sunbutter
2 tablespoons cinnamon honey
1 teaspoon vanilla
1 tablespoon coconut milk
Pinch of salt

Mix it all together in a bowl and enjoy with what ever fruit you’d like!!! I had apples and pears today!!! 🙂

Broiled Steak….What!?

While in Colorado we were trying to plan our menu so that we didn’t have many leftovers to lug home, and we don’t have all of the state of the art cooking materials up in the cabin so we had to take it back to the old school days. My mom grew up on a ranch in a little poe dunk town so she had the brilliant idea of broiling some steaks, baking some taters, and boiling some fresh green beans. So that is just what we did!

How to Broil a steak!
Well this all depends on how you like your steaks, and how thick your steaks are. For me I like my steaks medium rare and the particular steak that I was cooking was just about an inch thick and weighed about 6 ounces. So what you do is season your meat however you like it (we did salt, pepper, and garlic) and then turn your oven on lo broil and cook for 6 minutes on each side! Waaahhhlaaa! you have one juicy yummy steak! just cook evenly on both sides to your desired temperature!

For the potatoes I preheated the oven to 400, washed my skins, rubbed them with a little oil and then set them directly on the rack or in a pan to prevent messes, no foil!!, and baked them for 45 minutes to an hour, this will allow the skin to get crispy and the insides to be all soft and gooey!

For the green beans I went to the store and bought some fresh green beans and snapped them and removed the stems. Filled a pot with water, diced some garlic, cut up two pieces of bacon, added some salt and pepper to taste, brought it to a boil, covered and let it simmer for about an hour or until everything is done and they are too your desired tenderness!

You can never go wrong with steak and taters!!! Yum Yum! Quick and delicious!


Paleo “pizza” chili!!

Okay so since I have all these allergies and I can’t have all of that delicious American fries greasy food I have to settle for paleo style pizza chili to get my fix in! It is absolutely delicious and fills my void perfectly! I think this is a dish for repeat, it can serve a lot of people, you can fill it with all your favorite pizza toppings , and the kids will love it too! ( much healthier than the real thing!)

Ingredients for my family…
2 pounds hamburger meat
1 bell pepper chopped ( I did half green pepper half red pepper)
1 onion chopped
3 garlic cloves chopped
2 cans muir glen pizza sauce
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon oregano dried
1 cup beef broth or water
Now pick your favorite ingredients to top your “pizza” I chose green chiles, mushrooms, and black olives, an some chopped up Applegate pepperoni ! You could choose bacon, chicken, ham, pineapple, jalopenos, diced tomatoes, spinach….whatever you want!!!


Now brown your meat and Hal way through browning add in your garlic onion and bell peppers… Then put your meat mixture in a big stock/soup pot and add all of your other ingredients, stir it all up, bring it to a boil cover it with a lid and let it simmer for an hour or 30 minutes if you are pressed for time! If you can have cheese in your diet add it to the top at the end!!

If you want to do in the crock pot then you will just add all your ingredients and cook on low 4-6 hours or meat is cooked through.

“Caramel dip”

This weekend I got on a little bit of a dip kick lol! I made three different kinds of veggie dips and one fruit dip! I will post the veggie dips at a later date because I forgot to take pictures 😦 but I am going to give you the fruit dip I made! It is pretty sweet so if your not use to sugar be careful, it will satisfy your sweet tooth!

Caramel dip ingredients
10 medjool dates pitted
1/2 cup coconut cream or milk if you don’t have cream
2 tablespoons honey ( I used cinnamon honey)
1 teaspoon vanilla
1/2 teaspoon salt
2 tablespoons water (may need 3)

Put all ingredients a food processor or blender and blend it all up! Add another tablespoon of water if you are having trouble with blending !


Now cut up any kind of fruit you like! Apples, pears, anything good for dipping! Enjoy! Yum!
