Preheat the oven to 350 F
Chop up the Brussels sprouts and toss in some bacon fat then salt pepper and garlic them to taste. Place them on a Pan and bake for 30 minutes or your desired tenderness
Now peel your beets and chop them into sliced or French fry bites the toss with olive oil salt pepper and garlic and bake for 30 minutes or fork tender
Add these beauties to any dish 🙂
So I was playing around with some sunbutter today and came up with this delicious caramel dip! It was soo good! Hope you like it 🙂
2 tablespoons sunbutter
2 tablespoons cinnamon honey
1 teaspoon vanilla
1 tablespoon coconut milk
Pinch of salt
Mix it all together in a bowl and enjoy with what ever fruit you’d like!!! I had apples and pears today!!! 🙂
Today was my first day back into waking up early, getting some type of workout in, and a full day of work, plus grocery shopping, and then fixing a delicious healthy dinner! I stumbled upon this recipe while we were driving 10 hours to Colorado. My oh My was it delicious….I don’t remember the last time I had enchiladas! This is a great alternative to the real thing! I hope you guys find it as satisfying as I did! Happy Wednesday!
Preheat your oven to 350F
Ingredients for the sauce
can of tomato paste ( i like muir glen)
one cup of beef broth
1/2 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon salt
2 tablespoons chili powder
put all the ingredients in a sauté pan and bring to a low boil and then reduce heat to keep it warm until you pour it over your enchiladas
Ingredients for your enchiladas!
head of cabbage with 10-12 leaves pulled off
1 pound venison
1 onion chopped
2 garlic cloves chopped
1 teaspoon salt
1 teaspoon pepper
in a skillet brown your meat with the onion, garlic, salt, and pepper. meanwhile put a couple cups of water in a pot and bring to a boil, once it has reached a boil set your cabbage leaves into the pot and cover with a lid, then turn off the burner and let the cabbage leaves soften. Once softened take some tongs and remove one leaf, set it into your baking pan and fill with your meat mixture, roll over so its like a burrito, continue this process until you have used all of your meat. Next pour your sauce over the top of your enchiladas. Set in the oven at 350 for 20 minutes. Yum Yum Yum!

A pound of venison

While in Colorado we were trying to plan our menu so that we didn’t have many leftovers to lug home, and we don’t have all of the state of the art cooking materials up in the cabin so we had to take it back to the old school days. My mom grew up on a ranch in a little poe dunk town so she had the brilliant idea of broiling some steaks, baking some taters, and boiling some fresh green beans. So that is just what we did!
How to Broil a steak!
Well this all depends on how you like your steaks, and how thick your steaks are. For me I like my steaks medium rare and the particular steak that I was cooking was just about an inch thick and weighed about 6 ounces. So what you do is season your meat however you like it (we did salt, pepper, and garlic) and then turn your oven on lo broil and cook for 6 minutes on each side! Waaahhhlaaa! you have one juicy yummy steak! just cook evenly on both sides to your desired temperature!
For the potatoes I preheated the oven to 400, washed my skins, rubbed them with a little oil and then set them directly on the rack or in a pan to prevent messes, no foil!!, and baked them for 45 minutes to an hour, this will allow the skin to get crispy and the insides to be all soft and gooey!
For the green beans I went to the store and bought some fresh green beans and snapped them and removed the stems. Filled a pot with water, diced some garlic, cut up two pieces of bacon, added some salt and pepper to taste, brought it to a boil, covered and let it simmer for about an hour or until everything is done and they are too your desired tenderness!
You can never go wrong with steak and taters!!! Yum Yum! Quick and delicious!
I always take advantage of the opportunity to make a big breakfast casserole or dish when I have family to spoil and enjoy it with. I found this recipe on paleomg ill include the link here at the bottom. It was a sure hit , I’d even make it at home to heat and eat all week. It has all the components of a complete breakfast!!
Mushrooms ( baby portabellas)
1 teaspoon Onion powder
1 teaspoon Garlic powder
1/2 cup coconut milk
Sweet potato sliced thin lengthwise ( these will be your layers)
1 pound spicy italian sausage (I used Mulays)
2 tablespoons fat of choice ( I used coconut oil)
Now in a saute pan put a tablespoon of fat and cook your onions and mushrooms seasoned with salt and pepper until soft. Then saute your sausage in a separate pan until browned or cooked through. Next cut your potato. Time to take out your pan! Cut your sweet potato and lay it in your pan as your base layer, then put your mushroom and onion mixture and sausage on, then repeat one more time. In a small bowl whisk together your coconut milk, garlic, and onion powder. Spread this on top of your layers, sprinkle with a little salt and pepper. cover your dish with foil and bake at 375 for 30-35 minutes or until your potatoes are soft. while that is in the oven you will need to scramble your eggs! I put a tablespoon of fat in the pan ( this would be amazing with bacon fat!) and scrambled my eggs with a little salt and pepper to taste. When your layers are done in the oven remove them, remove the foil and top with your hot, fresh scrambled eggs! Pour a couple glasses of fresh squeezed orange juice, gather around the table and make some memories!! you won’t regret it!!

This past weekend my mom, stepdad, and his mom took a trip up to pagosa springs Colorado where we have a little cabin. It was such a nice refresher to get out of town, have some fun, make some great memories, and spend quality time with the family. I was only missing a few pieces to the puzzle! Well of course it was cold and there was lots of snow on the ground so I wanted to make a yummy warm comfort food. What better to make than beef stew! It made the cabin smell of comfort and warmth and it tasted absolutely divine.
Ingredients all dumped into the crockpot set on low for 10 hrs or until done …could take longer or shorter depending on altitude and if your meat is frozen or thawed.
I put in 2 sweet potatoes cubed
Bag of baby carrots
4 stalks Celery chopped
2 28oz cans of muir glen fire roasted tomatoes
2 pounds beef stew meat
1 teaspoon thyme and rosemary
Salt and pepper to taste
One box of beef stock (enough to cover all your veggies)
Yum yum yum!
Okay so since I have all these allergies and I can’t have all of that delicious American fries greasy food I have to settle for paleo style pizza chili to get my fix in! It is absolutely delicious and fills my void perfectly! I think this is a dish for repeat, it can serve a lot of people, you can fill it with all your favorite pizza toppings , and the kids will love it too! ( much healthier than the real thing!)
Ingredients for my family…
2 pounds hamburger meat
1 bell pepper chopped ( I did half green pepper half red pepper)
1 onion chopped
3 garlic cloves chopped
2 cans muir glen pizza sauce
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon oregano dried
1 cup beef broth or water
Now pick your favorite ingredients to top your “pizza” I chose green chiles, mushrooms, and black olives, an some chopped up Applegate pepperoni ! You could choose bacon, chicken, ham, pineapple, jalopenos, diced tomatoes, spinach….whatever you want!!!
Now brown your meat and Hal way through browning add in your garlic onion and bell peppers… Then put your meat mixture in a big stock/soup pot and add all of your other ingredients, stir it all up, bring it to a boil cover it with a lid and let it simmer for an hour or 30 minutes if you are pressed for time! If you can have cheese in your diet add it to the top at the end!!

If you want to do in the crock pot then you will just add all your ingredients and cook on low 4-6 hours or meat is cooked through.

This weekend I got on a little bit of a dip kick lol! I made three different kinds of veggie dips and one fruit dip! I will post the veggie dips at a later date because I forgot to take pictures 😦 but I am going to give you the fruit dip I made! It is pretty sweet so if your not use to sugar be careful, it will satisfy your sweet tooth!
Caramel dip ingredients
10 medjool dates pitted
1/2 cup coconut cream or milk if you don’t have cream
2 tablespoons honey ( I used cinnamon honey)
1 teaspoon vanilla
1/2 teaspoon salt
2 tablespoons water (may need 3)
Put all ingredients a food processor or blender and blend it all up! Add another tablespoon of water if you are having trouble with blending !
Now cut up any kind of fruit you like! Apples, pears, anything good for dipping! Enjoy! Yum!
Love the smell of cooking in the crock pot! Delicious! I spent most of my day cleaning and worked a half day so it was nice to have dinner ready and waiting on me at 615! I was starving!

An onion chopped
Red and greed pepper chopped
Pack of sliced portobello mushrooms
2 tablespoons olive oil
1/2 teaspoon salt
1 tablespoon Italian seasoning
4 garlic cloves chopped
1 pound of chicken
I put everything in the crockpot with the olive oil and chicken on bottom ( my chicken was frozen) and turned her on low and let it do it’s thing! 5 hours later you have a delicious soup or put it on top of some spaghetti squash !
