Turkey meatloaf!!!

This is one of the easiest most yummy meat loafs ever!! This one does not linger around our house long at all!! So simple, and you can pair it with some steamed veggies and
Poof a yummy healthy weeknight meal!

Preheat the oven to 375

Ingredients
One green bell pepper
Half an onion
Three celery stalks
1 tsp salt, garlic powder, pepper
2 Tbsp coconut aminos or your choice of soy sauce
One egg
2 pounds ground turkey

Chop up all your veggies, place all ingredients in a bowl and mix with your hands ( make it with all your love that’s the key 🙂 ) put it in a loaf pan sprayed with a little coconut oil for easy removal! Bake for one hour and then let sit for 10 minutes!

Eat that yummy goodness and fuel your body with healthy food!!!

Paleo buffalo chicken casserole

Happy Father’s Day!!! I stumbled upon this yummy recipe the other day while I was working ☺ hope you guys are having a great day celebrating your daddy’s!!

Preheat the oven to 400
Ingredients
Brussels sprouts
Head of cauliflower
1lb chicken chopped
1 t Salt
1 t Pepper
5-6 T Hot sauce ( I used tessemaes hot )
1 T Paprika
2 T Garlic powder
Mushrooms
1/3 cup Coconut oil melted
5-6 slices cooked bacon chopped

Place the coconut oil , hot sauce, spices, cauliflower, and Brussels sprouts in a pan mix together to coat and bake for 30 minutes stirring every 10 minutes

Meanwhile chop up your chicken and mushrooms and drizzle some hot sauce on them while the veggies cook

Once the veggies are done place the chicken and mushrooms on top and bake for 15 minutes stir things up to make sure all the chicken gets cooked and then finish it off 5 more minutes! Enjoy!!!

Jalopeno Dijon chicken and shrimp skewers

It’s been awhile since I have cooked something new and delicious to share!!! So here’s a kick off for some summer cook outs! Life happens I was busy busy so I baked lots of chicken and veggies and just packed my lunch and dinner for the week! I am excited to cook some new and yummy food!

Ingredients
1lb fresh gulf shrimp
1 lb chicken breast cubed
Red onion cubed
Green bell pepper cut in into squares
Red bell pepper cut into squares
Yellow bell pepper cut into squares
Orange bell pepper cut into squares
4 jalopenos diced with or without seeds
2 cloves garlic chopped
4 Tbsp Dijon mustard
2 Tbsp olive oil
2 Tbsp raw honey
2 tsp salt
1 Tbsp rosemary
1 tsp black pepper

Marinade the chicken and shrimp in the all ingredients minus the bell peppers and onion for 24 hours
Then assemble your skewers
Fire up the grill
And enjoy :))

Your taste buds and tummy will be very happy 🙂

Guacamole!!!

Simply the best guacamole is the homemade with love kind!

6 avocados
One bunch cilantro
3 Roma tomatoes chopped
1/2 a red onion
1 tablespoon lime juice
2 seeded and chopped jalopenos
Garlic salt
Pepper

Now put all your avocados a in one bowl and mash up! Then add your onion and stir. Then add your jalopenos and stir. Then add your tomatoes and stir. Then add your cilantro. Stir. Add your lime juice garlic salt and pepper . Now I added the spices in and forgot to see exactly how much so just start with a 1/2 a teaspoon each and taste it if you want or need more just add a little more at a time!!

It turned out delicious! It was a hit! Eat it with veggies put it on a dish or if you eat chips yumm! Lol

Baked chicken fajita!

This is super easy and quick to make!

Ingredients
1 pound chicken sliced into strips
One red and green bell pepper sliced thinly
One package mushrooms
One onion thinly sliced
One can of muir glen tomatoes
One can green chilies
1/2 teaspoon Garlic powder
2 teaspoons Chili powder
2 tablespoons Olive oil
2 teaspoons Cumin
1/2 teaspoon oregano
1/4 teaspoon salt

Put all of your ingredients in a baking dish. Preheat the oven to 400F. Then mix your olive oil and spices in a bowl and pour over your concoction. Bake for 30 minutes or until veggies are tender and chicken is cooked through!

Now make a salad or taco or whatever you want out of it!

Paleo pancakes!

This morning everyone in my house was having pancakes and waffles and I am sitting there thinking this is so unfair! So I did something about it and made some that I could eat! I hope you like them as much as I did!

Ingredients
2 bananas
1 egg
1 tablespoon nut butter of choice

Mix it all together turn the stove on spray some coconut oil in the pan pour your batter in the pan but not too much or it will be too hard to flip! Once it starts to bubble through flip it! Once it’s cooked through on the other side it’s all done and ready to eat!

I also popped some Cajun chicken sausage in the oven at 350f while I made my pancakes!

Breakfast of champions!! 🙂

Breakfast scramble!

This morning I was packing up to head out of town with my dads side of the family so I cooked two 8lb pork butts and shredded them and then tossed it with some sensuous dinosaur bbq sauce. Man oh man did it smell delicious! While I was working on that I decided to cook breakfast for mom and my stepdad before I made them go on a walk with me and our 2 precious and might I say good looking labs!

What I did was sauté some zucchini squash green red and yellow bell peppers in some olive oil salt pepper and garlic to taste until tender.
In a separate bowl whisk together 8 eggs with salt pepper and garlic to taste then add the eggs to the veggies and stir until cooked through.

Serve piping hot with a glass of orange juice! Delicious !

Veggie dip!

Having food allergies can be one of the most frustrating things sometimes. In my family we love to have our fresh cut veggies and ranch dip. It has been a staple in the family for as far back as my grandpa being a little boy. So one day I thought…That Enough!…I want to be able to enjoy my fresh veggies with a dip too. My Dad and his wife had gone to a little garden convention there where they live and got to taste all kinds of good organic fresh foods. They then passed the information on to me, I started to do all of my research, and well the rest is history!! I have found a new love, and it is great to have on hand for snacks or to take on road trips, or to just fill that hungry tummy when your in a bind. All of the dips are gluten free, but some of the dips do contain milk…so be careful and read your ingredients! Quick Go buy some fresh veggies and order you some of the dips to try…all of the ones that I have tried thus far have been delicious!

now if your wondering what I use for the mix I use a cup of vegan mayonnaise it is earth balance brand but I have made my own….of course that takes a really long time to do but it is way healthier and truly paleo, I will have to post that recipe at a later date, with one cup of tofutti sour cream, it is vegan as well…of course I make this too but again for the quick fast and easy you can just buy them, with one pack of season…let it sit in the fridge to meld all of the flavors..about 30 minutes to an hour and then DIG IN!!

Bell peppers and sausage

This is an easy delicious quick dinner! We make this all the time around here! It’s just delicious!

Ingredients
Onion
Garlic 4 cloves
One can muir glen tomatoes with green chiles
Sausage link
Tri color bell peppers chopped
2 teaspoon oregano
1/2 teaspoon red pepper flakes
Salt and pepper
Olive oil

In the oven heat you sausage through or cook it at 350 until done and set aside

In a sauté pan over medium heat and cook bell peppers onions and garlic in olive oil . Once your veggies are soft add in your tomatoes and the oregano salt pepper and red pepper flakes and heat through. Now place that sausage on top and serve in a bowl!!

Eat it all up!!! Delicious :).

Creamy chicken bake

This one was a hit in our house! I found this on a paleo website/blog… Ill add the link here at the bottom.

Preheat the oven to 400f!

Ingredients
Cauliflower
Broccoli
2 cans coconut milk
1 cup vegetable stock
1.5-2 pounds chicken breasts
1/2 teaspoon cayenne
1/2 teaspoon smoked paprika
Salt and pepper
2 teaspoons garlic
Mushrooms
Onion
4 cloves garlic
Olive oil
Bacon fat

Chop the broccoli and cauliflower toss in olive oil salt and pepper. Bake for 20 minutes.

Meanwhile heat bacon fat in sauté pan and cook chopped chicken breast with salt and pepper. Once cooked spoon out leaving the juices in the pan the chicken to a separate bowl or on top of your broccoli and cauliflower if done.

Add your onion and garlic chopped into the pan and cook till translucent. Then add in your cans of coconut milk vegetable stock and spices once thoroughly combined pour over your chicken broccoli and cauliflower . Now add your sliced mushrooms on top

Bake for 30 minutes
